Overview
Aachener Weihnachts-Leberwurst is a protected seasonal liver-sausage speciality from Aachen. It is firm yet spreadable when chilled, with a light brown to pale pink colour. Pork, pig liver, braised onion, nitrite curing salt and cream form the base. Coriander, cardamom, pepper and ginger lead the Christmas spice profile, sometimes joined by aniseed or cranberries.

Identity and terminology
The protected names are Aachener Weihnachts-Leberwurst and the local-dialect Oecher Weihnachtsleberwurst. Both identify the same PGI, not a broad category of festive liver sausage. Christmas liver sausage made elsewhere may follow a similar flavour direction, but it cannot use the protected geographical name. The Atlas therefore separates the legal product article from any clearly labelled home reference-profile recipe.
Composition and characteristics
The registered identity requires cream and prohibits extraneous water. The cream compensates for moisture lost during cooking rather than extending the mixture. Fresh or promptly frozen liver is carefully freed of bile ducts to prevent bitterness. The finished paste has a high-quality meat-protein profile and a characteristic warm-spice aroma. Some permitted versions carry a restrained smoked note.
Production and process
Production takes place entirely within Aachen for the protected product. Pork components are cooked, liver is prepared carefully and braised onion, cure, cream and spices are incorporated into a smooth spreadable farce. The mixture may be filled into casings, jars or cans before heating. Commercial production must follow the registered specification and applicable food-business controls.
History and regional development
Aachen butchers have made the sausage under its recognised name for more than a century, drawing on a longer local sausage tradition. Its reputation is reinforced by seasonal competitions and the ceremonial cutting by the city's mayor, which marks the start of the Christmas season. Registration protects the link between that reputation, the recipe and production in Aachen.
Use, storage and related products
The sausage is spread on bread and served during the Christmas period, often as part of local festive hospitality. Cream gives a softer richness than many everyday liver sausages, while the spice profile distinguishes it from Bauernleberwurst and Berliner Leberwurst. Keep it chilled, minimise post-cook contamination and follow the storage instructions of the certified producer.
