Overview
Afyon Sucuğu is the EU-protected fermented sausage of Afyonkarahisar, Turkey. It is a strongly seasoned, dried beef-based sucuk whose protected identity is separate from the generic Sucuk family.

How to recognise it
The sausage has a reddish-brown exterior and a dense red slice with visible fat. Garlic and warm spices should be prominent without sour spoilage, rancidity or a wet centre.
Origins and history
Afyonkarahisar developed as a livestock and food-processing centre on Anatolian trade routes. Local butchers refined a firm, intensely spiced sausage suited to drying and storage, and the name gained Turkish protection before EU PGI registration in 2025.
