Overview
Alheira de Barroso-Montalegre is a smoked horseshoe-shaped bread-and-meat sausage protected as a geographical indication in the Barroso and Montalegre area of northern Portugal. It belongs to the distinctive Portuguese alheira family.

Identity and terminology
The protected name may be used only for certified production within the defined area and according to the specification. The Curesmith recipe is a specification-aligned home adaptation and cannot carry the PGI commercially.
Composition and characteristics
The filling combines cooked pork and fat with poultry or other permitted meats, wheat bread, cooking stock, garlic, paprika and regional seasoning. It is fibrous and bread-bound rather than a minced raw-meat sausage.
Production and process
Meats are cooked and shredded, bread is soaked in seasoned stock, and the mixture is stuffed into casing as a horseshoe before smoking. The product remains refrigerated and is normally fried, grilled or baked before service.
History and regional forms
Alheiras are widely associated with the food culture of Trás-os-Montes and northern Portugal. The Barroso-Montalegre branch reflects local pig breeds, smokehouses and household meat preservation, later formalised through PGI registration.
Use, storage and related products
It is fried or baked and served with potatoes, greens, rice or egg. It differs from Alheira de Mirandela and Alheira de Vinhais through its protected area and specification.

Method
- Simmer pork, poultry, rabbit and jowl separately or by tenderness in unsalted water until each reaches a safe endpoint and is tender; reserve filtered stock.
- Debone while warm, then cool meats promptly to 4°C or below.
- Pour measured hot stock over bread, stand 20 minutes and mix to a firm moist paste.
- Sweat onion and garlic in olive oil until translucent; cool.
- Combine shredded meats, bread paste, aromatics, salt, pepper, paprikas and parsley.
- Stuff into hog casing and tie into horseshoe rings.
Safety. Smoking and cooked ingredients do not make alheira shelf stable. Keep refrigerated and reheat or cook as specified.
