Alheira de Vinhais is a protected smoked bread-and-pork sausage from Vinhais and its defined Trás-os-Montes production area. Its specification emphasises Bísaro pigs or qualifying crossbreeds.

Identity and terminology

The PGI protects both geographical origin and production requirements. A home recipe, even when aligned with the published composition, cannot be sold under the protected name.

Composition and characteristics

Cooked Bísaro-type pork, head or cheek meat, belly, wheat bread, stock, garlic, paprika and seasoning form the filling. The texture is shredded and cohesive, and the sausage is shaped as a horseshoe.

Production and process

Meat is cooked, deboned and shredded; bread is moistened with stock; the mixture is stuffed and smoked. It is a refrigerated product intended for cooking or thorough reheating.

History and regional forms

Vinhais is a major centre of Trás-os-Montes smoked-meat culture and hosts a long-established fumeiro tradition. Formal registration linked the sausage to local Bísaro pig husbandry and smokehouse practice.

Use, storage and related products

It is fried, baked or grilled and served with potatoes, greens, rice or eggs. It must remain separate from the Mirandela and Barroso-Montalegre PGIs.

Method

  1. Simmer pork and a separate chicken stock component until safe and tender; reserve filtered poultry-enriched stock.
  2. Debone pork while warm and cool promptly to 4°C or below. Do not add poultry meat.
  3. Hydrate bread with measured hot stock for 20 minutes to form a firm paste.
  4. Combine pork, belly, bread paste, salt, pepper, paprika, garlic and olive oil.
  5. Stuff into hog casing and form horseshoe rings.
  6. Apply oak smoke at 18–22°C for up to 8 hours in a controlled chamber, then refrigerate.

Safety. Cooked filling and smoke do not establish ambient stability. Refrigerate and prepare according to the product status.
