The cut

Identity and terminology
The title means that all meat and fat components are bovine. It does not imply kosher or halal status, which require separate certification, and it should not be confused with a fresh beef sausage or a beef frankfurter.
Composition and characteristics
Lean top-round cubes provide the recognisable cut face, while chuck, shank and collagen-rich beef trim form the binding matrix. The finished chub is firm, sliceable and distinctly beefy, with smoke and curing colour.
Production and process
The lean cubes are cured separately, the matrix is finely comminuted to extract protein, and both fractions are combined without destroying the visible structure. The sausage is stuffed into a large casing, smoked, cooked and rapidly cooled.
History and regional forms
All-beef cooked sausages expanded in commercial meat processing to serve species-specific markets and to use the full range of beef muscles and connective tissues. Their identity depends more on declared species and structure than on regional history.
Use, storage and related products
It is served sliced cold, reheated or used in sandwiches. It differs from fresh beef sausage, kosher beef sausage and Polish beef ham sausage, which has a different matrix and naming tradition.

Method
- Mix top-round cubes with 9 g salt and 1.25 g Cure #1; cover and cure 24–48 hours at 2–4°C.
- Grind chuck through 8 mm and shank/tendon through 2–3 mm.
- Process shank and tendon with water, remaining salt, Cure #1, sugar and spices until a sticky fine matrix forms.
- Extract cured cubes until tacky; add chuck and fine matrix and mix uniformly.
- Stuff firmly into fibrous casings and remove air pockets.
- Dry casings at 45–50°C without smoke for 30–45 minutes.
Safety. The cooked sausage requires validated thermal processing, rapid cooling and refrigeration. Smoke does not make it ambient stable.
