Overview

Anchoas en Salazón begin as whole anchovies matured under salt, then cleaned by hand and packed as fillets, often in olive oil. The long salt cure produces a dense, reddish-brown fillet very different from fresh boquerones.

Traditional, protected or commercial production

There is no current EU GI for generic Anchoa de Santoña. Fresh anchovies are headed and gutted, layered in salt under pressure, matured for months, then washed, trimmed, filleted and packed in oil as a refrigerated semi-preserve.

How to recognise it

The finished fillet is reddish-brown, flexible and meaty, with a clean savoury aroma and no loose scales or bones. It should taste concentrated but not harshly salty. Rancid oil, histamine-like burning, gas or soft decomposition are unacceptable.

Origins and history

Santoña became the centre of the modern Spanish anchovy industry in the late nineteenth and early twentieth centuries. Sicilian salters brought specialised knowledge of maturing anchovies in barrels and cleaning them into boneless fillets, while the Bay of Biscay supplied a rich spring fish. Local women developed the skilled sobado and hand-cleaning work that still defines the finest fillets. The industry transformed a seasonal catch into one of Cantabria's strongest culinary identities.

Serving and cultural significance

Serve on bread with butter or tomato, over roasted peppers, beside olives, or as the savoury centre of a pintxo. Allow excess oil to drain and avoid overwhelming a high-quality fillet with heavy garnish. A single anchovy can season eggs, vegetables, sauces or grilled meat, but the finest fillets deserve to be eaten almost alone.
