Overview
Atún en Aceite is tuna or bonito gently cooked, separated into clean loins and covered with olive oil. Commercial tins are sterilised shelf-stable preserves; the Curesmith home version is a refrigerated confit and must not be treated as equivalent to industrial canning.

How to recognise it
The loin should be pale pink to cream, moist and flaking in large clean pieces, surrounded by clear fresh oil. A sour smell, foaming, a swollen lid, gas, dark decomposition or a peppery histamine burn are reasons to discard it.
Origins and history
Spain's tuna-preserving culture reaches back to ancient fisheries and Roman salting works. In the south, almadraba nets intercepted migrating bluefin; in the north, bonito del norte supported seasonal canneries. Once metal canning and heat sterilisation developed, cooking tuna and sealing it under oil became a major industry. The domestic jar followed the flavour of the conserve but not automatically its safety process. Industrial canneries also changed coastal labour, creating skilled seasonal work in cleaning, trimming and packing the fish into uniform loins.

Serving and cultural significance
Drain gently and serve in salads, empanadas, sandwiches, with peppers or simply with bread and tomato. The best loins should remain in large flakes rather than being mashed into the oil. Use the packing oil in dressings or sauces only while it remains within the same safe refrigerated shelf life.

- This is a cooked product. Cook thoroughly to a safe internal temperature and cool promptly; cooking does not kill botulinum spores, so keep the warm-holding window short and refrigerate.
