Bauernleberwurst is a coarse German liver sausage associated with farmhouse or country-style production. Pork liver is combined with fatty belly and collagen-rich pork, producing a rich slice with visible texture rather than a completely smooth paste. White pepper and marjoram are prominent, supported by allspice, ginger and mace. The product is cooked and served chilled or gently warmed.

Identity and terminology
Bauer means farmer, and Bauern appears in many German sausage names. Here it signals a rustic liver-sausage style rather than ownership by a specific farm or origin in one village. The term should not be used as a catch-all for every coarse Leberwurst. It remains distinct from fine Berliner Leberwurst, cream-enriched Christmas sausage and raw spreadable Mettwurst.
Composition and characteristics
The structure comes from processing different portions of liver and pork at different grains. Coarse liver and belly create visible texture, while a fine raw-liver phase supplies binding. Collagen-rich head or shank meat adds body after cooking. A cured version develops a pink-brown tone and rounded flavour, but remains a moist refrigerated cooked sausage.
Production and process
Collagen-rich pork is cooked until tender, deboned and cooled. Part of the liver may be lightly scalded for texture, while the remaining cold liver is finely processed with salt, cure and spices. The coarse and fine fractions are mixed, filled with expansion room and poached. The executable process depends on temperature control rather than a fixed time alone.
History and regional development
Farmhouse liver sausages grew from whole-animal butchery, where head meat, belly, liver and rind were converted into highly flavoured cooked products. Regional practice generated many related names and formulas. Modern German guidelines help distinguish recognised liver-sausage categories, yet Bauernleberwurst is not treated here as an EU protected geographical designation.
Use, storage and related products
Serve the sausage on rye or farmhouse bread with mustard, pickles or onion. Coarse slices can also be warmed gently without hard frying, which may split the fat.
