Method
- Mix meats with salt and Cure #1; refrigerate 24–48 hours.
- Grind each component to specified size.
- Mix shank with water and spices until sticky, then add top round and chuck.
- Stuff firmly into 60 mm fibrous casing.
- Dry at 45–50°C, then hot-smoke at 55–65°C for 110–130 minutes.
- Poach at 72–78°C until the cold point reaches 71°C.
Safety. Light drying after cooking is not a shelf-stability release. Keep refrigerated unless validated water activity proves otherwise.
