Overview

Kiełbasa szynkowa wołowa is a Polish all-beef ham sausage built around large cured cubes of lean beef held in a fine beef matrix. Szynkowa describes the ham-like chunk structure, not pork ham.

Identity and terminology

Wołowa means beef. The full Polish name is important because a translated 'beef ham sausage' can be mistaken for a mixed ham product. It is a technical cut-and-structure sausage rather than a protected regional name.

Composition and characteristics

Lean top round forms conspicuous cubes, while beef shank provides collagen and extracted protein for the matrix. Pepper and nutmeg are restrained so the beef and cured structure remain dominant.

Production and process

Lean cubes are cured separately, then mixed with a finely processed shank matrix. The chub is stuffed into a large casing, smoked, cooked and rapidly chilled.

History and regional forms

Polish szynkowa sausages developed within a classification system that grouped products by premium lean chunks resembling ham. Beef versions demonstrate the adaptation of that structure beyond pork.

Use, storage and related products

It is sliced thinly for bread, sandwiches and cold platters. It differs from whole-muscle beef ham and from all-beef sausage with a more complex chuck-and-tendon matrix.

Method

  1. Allocate salt and Cure #1 proportionally between top-round cubes and shank; cure 24–48 hours at 2–4°C.
  2. Grind shank through 3 mm and process with water, pepper, nutmeg and sugar to a sticky matrix.
  3. Mix cured top-round cubes until tacky.
  4. Fold fine matrix into lean chunks uniformly.
  5. Stuff firmly into fibrous casing and remove air pockets.
  6. Dry at 45–50°C without smoke, then hot-smoke at 55–65°C for 120–150 minutes.
