Overview
Curry Bratwurst is a curry-seasoned sausage variation, not automatically the Berlin dish Currywurst. Its curry character is incorporated into the sausage mixture rather than supplied only by a curry-spiced tomato sauce after cooking.

Identity and terminology
The distinction from Currywurst is essential. Currywurst normally consists of a cooked sausage cut into pieces and covered with seasoned ketchup or tomato sauce and curry powder. Curry Bratwurst describes a sausage whose own filling carries curry seasoning.
Composition and characteristics
Typical versions use pork or pork and veal with curry powder, turmeric, coriander, cumin, fenugreek and chilli. The cut face may be yellow-gold or orange depending on the spice blend, with a fine or medium Bratwurst texture.
Production and process
The sausage is made as a fresh or cooked Bratwurst branch depending on the formula. The Curesmith record selects one executable cooked variation. Curry spices contribute flavour and colour but do not preserve the product.
History and regional forms
The product reflects twentieth-century German interest in curry flavour following the rise of Currywurst after the Second World War. Butchers and manufacturers translated the familiar sauce profile into flavoured grilling sausages, creating a derivative category rather than an old regional type.
Use, storage and related products
It is grilled and served in a roll, with chips, or with additional curry sauce. It is related to Currywurst and ordinary Bratwurst but should be indexed separately because the seasoning is integral to the sausage.

Method
- Chill pork, water and equipment to 0–3°C.
- Grind pork shoulder once through 3 mm.
- Add salt, curry, pepper, mace, ginger, cardamom, lemon zest, Worcestershire sauce and water. Mix until sticky and cohesive.
- Stuff into 28 mm casings and form even links.
- Refrigerate for 4–12 hours at 2–4°C.
- Poach in 78–80°C water until the cold point reaches 71°C.
