Cârnați afumați are Romanian smoked sausages rather than one nationally fixed formula. The Curesmith branch is a medium-coarse pork link seasoned with garlic, coriander, black pepper, ginger and a little sugar, then cured, hot-smoked and cooked. It should have a taut brown casing, a juicy cured-pink slice and visible meat particles rather than an emulsified interior. The family title is intentionally descriptive: Romanian butchers and households make many smoked sausages with different meat balances, spices, calibres and drying practices.

Identity and terminology
Cârnați is the Romanian plural of sausage, while afumați means smoked. The words therefore describe a process family and cannot by themselves establish a single regional identity. Official Romanian and European records contain more specific names, including Cârnați de Pleșcoi and Cârnați din topor din Vâlcea, whose compositions, methods and geographical links are separately protected. The generic Atlas title must never be used to blur those protected boundaries or to imply that this pork formula is the universal Romanian standard.
Composition and characteristics
This developed branch uses lean pork and a smaller fatty-pork fraction at a medium grind. Garlic provides the dominant aromatic note, coriander adds a warm citrus-like edge, ginger gives gentle lift and black pepper supplies direct heat. The fat should remain distinct enough to carry flavour without producing a greasy cut face. Because the source formula is pork-only and mildly spiced, it is compositionally remote from the sheep-and-beef, chilli-and-thyme architecture of Cârnați de Pleșcoi PGI.
Production and process
Cold lean and fatty pork are ground separately, then mixed with ice, salt, curing salt and seasoning until tacky. The mixture is filled into hog casing, cured under refrigeration and dried only until the surface will accept smoke cleanly. Hot smoke develops colour and aroma before a measured final cook. Rapid chilling follows immediately. The home branch does not use an uncontrolled warm hang, and smoke colour is never treated as proof that the centre is safely cooked.
History and regional forms
Romania's official traditional-products register records numerous named smoked sausages from different counties and producers. That diversity is the historical point: smoking belongs broadly to Romanian meat preservation, while particular communities distinguish their products through raw materials, cutting, spice and local process. Recent geographical registrations reinforce the difference between a general food category and a legally defined regional product. Use, storage and related products
Serve the sausage sliced cold after full chilling, warmed gently with beans, cabbage, potatoes or polenta, or browned in a pan or on a grill. Its garlic-and-coriander profile separates it from paprika-led Hungarian links and from fresh Romanian mititei. Keep the finished sausage refrigerated and protect the ready-to-eat surface after cooking. A cured colour and smoky casing do not make the product shelf stable, and a home batch must not carry a protected geographical name unless its specification and certification requirements are met.

Method
- Weigh and chill pork, water and equipment to 0–2°C.
- Separate the lean and fatty pork, then grind each through 10 mm.
- Mix pork with ice, salt, Cure #1, sugar, pepper, coriander, ginger and garlic until tacky and evenly bound.
- Fill 36 mm hog casing firmly, remove air and refrigerate 8–12 hours.
- Surface-dry under controlled airflow, then apply clean hot smoke until evenly coloured.
- Finish in the smokehouse or poach gently until the cold point reaches 71°C.
