Method

  1. Chill chicken, fat, wine and equipment to 0–3°C.
  2. Grind chicken and fat through 8 mm.
  3. Add seasonings and wine; mix until lightly tacky.
  4. Stuff and link.
  5. Refrigerate 4–12 h at 2–4°C.
  6. Cook to 74°C cold point.
