Csabai kolbász is the paprika-led PGI sausage of Békéscsaba, with Csabai vastagkolbász naming the thicker form. It is smoked and matured, with paprika remaining the dominant seasoning.

How to recognise it
The casing is smoke-darkened and the interior is deep paprika red with clean fat pieces. Paprika leads, while caraway, pepper and garlic remain integrated rather than dominant.
Origins and history
Békéscsaba's Slovak-Hungarian household traditions, pig slaughter and access to high-quality paprika shaped a sausage known nationally by the twentieth century.
