Overview

English White Pudding is a pale cooked pudding in a sausage-shaped casing, here represented by a barley, wheat farina, flour, leek, milk and pork-fat branch. It contains no blood and no lean meat. The cooked grain and flour form the body, diced fat provides richness, leek adds gentle onion sweetness and milk binds the mixture. After poaching and chilling, the pudding is normally sliced and fried or grilled for service. It remains refrigerated and is not a dry cereal sausage.

Identity and terminology

White distinguishes the pudding from black pudding, whose identity depends on blood. Traditional does not mean there is one fixed British recipe. White puddings occur across England, Scotland and Ireland with different combinations of oatmeal, barley, bread, suet, pork meat, liver, onion and milk. The Atlas calls this formula English because that is the source's stated branch, but keeps it separate from Scottish White Pudding, also known as mealie pudding, whose recognised centre is oatmeal and fat.

Composition and characteristics

Pearl barley gives visible soft grains and a nutty flavour. Wheat flour and farina thicken the mass around six-millimetre pork-fat cubes, while leek creates green flecks and a mild savoury aroma. Milk contributes moisture and sweetness. White pepper, thyme and marjoram are restrained. The chilled pudding should slice cleanly without crumbling, leaking milk or showing free fat. When fried, the cut surfaces brown while the interior stays soft and cereal-rich. Wheat and milk are mandatory allergen declarations.

Production and process

Barley is cooked, drained thoroughly, cooled and weighed to a defined yield before mixing. Partly frozen fat is diced cleanly. Dry cereal and seasonings are dispersed through the cold barley and leek before milk is added gradually and fat folded in. Casings are filled with modest expansion room because cereal swells and softens. The pudding is gently poached to a measured centre, showered and fully chilled. Reheating by frying adds colour but is not a substitute for the initial complete cook.

History and regional forms

Savoury puddings use the older British sense of a seasoned mixture cooked in a casing rather than the modern sweet-dessert meaning. Regional formulas developed around available cereals and slaughter fats, turning inexpensive ingredients into filling breakfast and supper food. The present barley-leek branch records one part of that wider history without treating a modern secondary recipe as the national original. Official food alerts also show why cereal labels matter: products sold as white pudding have been recalled when undeclared gluten was present.

Use, storage and related products

Slice the chilled pudding thickly and fry or grill until browned and piping hot, serving it with eggs, tomatoes, mushrooms, potatoes or beans. It differs from Scottish mealie pudding through barley, flour, farina, leek and milk, and from Hog's Pudding through the absence of its West Country pork-and-rusk or offal identity. It is not black pudding because it contains no blood. Keep cooked puddings chilled, prevent ready-to-eat contamination and freeze surplus promptly.
