How to recognise it

It is a firm, dark red, heavily seasoned sausage with visible fat and a strong garlic aroma. The slice should be dense and stable, without greasy separation, sour purge or uncontrolled mould.

Origins and history

Kayseri's position as an Anatolian trading and livestock centre supported a major tradition of beef curing, including both pastırma and sucuk. The sausage became closely associated with the city's butchers and spice profile.

Serving and cultural significance
