Overview
Kiełbasa Tomaszowska is a Polish smoked cooked sausage built from pork, beef, heart, jowl and a finely worked connective-beef phase. The coarse fractions produce a varied cut face, while the fine phase binds them into a broad straight baton. Pepper, marjoram, caraway and garlic make the profile more aromatic than a plain ham sausage. It is a moist non-durable product despite its smoked casing and substantial calibre, so the finished sausage must remain refrigerated.

Identity and terminology
Tomaszowska is the feminine adjective from Tomaszów, a place-name shared by more than one Polish locality. The source associates the sausage with Tomaszów and historical Polish technical material lists tomaszowska as its own sausage category. That supports the product name but does not by itself prove one exclusive town, producer or present-day protected territory. The Atlas therefore preserves the Polish title while assigning no PDO, PGI or TSG status.
Composition and characteristics
Semi-fat pork, lean beef and trimmed heart remain coarse enough to be visible. Connective beef is fine-cut with ice to create the protein-rich base, while skinless jowl supplies fine fat and succulence. Marjoram and caraway give a recognisably Polish aromatic direction, pepper adds warmth and garlic completes the savoury profile. The broad slice should hold together cleanly without rubbery connective lumps, untrimmed vessels, fat separation, grey zones or loose purge.
Production and process
Heart is trimmed of valves, vessels, tough connective tissue and clotted blood before weighing. The connective beef and jowl are reduced separately with measured ice and seasoning. Coarse meats receive salt and curing salt throughout the animal block, then are folded into the binding phase below the smear threshold. The sausage is stuffed in a smoke-permeable casing, surface-dried, hot-smoked, scalded to a measured centre and cooled completely.
History and regional forms
The official Polish storage schedule from the 1960s places tomaszowska among non-durable sausages, alongside other cooked regional and technical names. That evidence is useful for classification and historical continuity, not a complete modern recipe specification. The source's liquid seasoning reflects industrial-era flavour practice. Because commercial formulations vary by market, the controlled branch makes its wheat-containing seasoning explicit rather than treating a brand name as allergen-free.
Use, storage and related products
Serve Tomaszowska cold in substantial slices with rye bread, mustard or pickled vegetables, or warm it gently. Declare wheat from the liquid seasoning and verify the label if a branded alternative is used. It differs from Tarnowska through its beef, heart and broad baton architecture, from ham sausage through its mixed fractions and spice profile, and from blood sausage because heart is muscle meat and no blood defines the filling.
