Kiełbasa Ukraińska in this entry is a historical Polish technical sausage, not a claim to represent all Ukrainian sausage making. The formula is beef-led, with a finely worked binding fraction and coarse pork jowl. Paprika, allspice, marjoram, pepper and garlic create a warm aromatic profile. The ring is hot-smoked and scalded, producing a light brown-red casing and a moist cured interior that remains refrigerated despite its historical semi-durable classification.

Identity and terminology
Ukraińska is the Polish feminine adjective meaning Ukrainian. Poland's 1964 technical storage classification lists ukraińska among semi-durable sausages beside products such as żywiecka and kujawska. That evidence fixes a Polish product name and category but does not authenticate this source recipe as a Ukrainian national standard. The Atlas therefore restores the Polish title and explicitly prevents the broad English label Ukrainian Sausage from absorbing unrelated Ukrainian fresh, baked, smoked or blood sausages.
Composition and characteristics
Lean beef forms most of the red-pink slice. A smaller collagen-rich beef fraction is trimmed and fine-cut with ice so it can bind the coarser meat, while skinless pork jowl contributes pale soft fat points and richness. Paprika strengthens the red tint without turning the sausage into a chilli product. Allspice and marjoram distinguish the aroma from a plain beef ring, and garlic gives the savoury finish expected in many central and eastern European sausages.
Production and process
The collagen-rich beef is not an excuse to use gristle or untrimmed sinew. It is selected, cleaned, ground fine and worked with ice, salt, curing salt and spices. Lean beef and chilled jowl are folded into that base at their own particle sizes. Controlled surface drying precedes hot smoke. Gentle scalding then brings the centre to the measured endpoint, followed by a shower and rapid chilling. The process includes no fermentation or shelf-stable release test.
History and regional forms
Polish industrial and cooperative meat production used many geographic adjectives for recognisable compositions, sometimes drawing on neighbouring culinary associations. Their names can survive after original formulas diverge. The archival listing proves that ukraińska existed as a distinct Polish category during that period; it does not assign European geographical protection or prove origin in modern Ukraine. Use, storage and related products
Serve Kiełbasa Ukraińska cold in substantial slices with rye bread, mustard and pickled cucumber, or warm it gently. It differs from Polish Turystyczna through its beef-led ring, from Krakowska through its fine binding phase and jowl, and from Ukrainian kovbasa families that may be fresh, roasted or differently smoked. Store continuously chilled and freeze surplus. Its old semi-durable category should never be read as permission for room-temperature storage.
