Origins and history
Loukanka belongs to Bulgaria's pressed raw-cured sausage tradition. Households and later specialist processors combined beef or buffalo meat with pork and firm fat, seasoned the mixture with cumin and pepper, and pressed the links repeatedly while they dried. The flattened oval cross-section is therefore not decorative: it shapes moisture loss and gives the finished slice its characteristic dense mosaic. The generic word developed during the nineteenth century and is sometimes connected with luk, the Bulgarian word for onion, although onion disappeared from later standard recipes. Panagyurishte became associated with a nationally standardised form whose recipe was codified in the twentieth century. Lukanka Panagyurska is now a reserved TSG, but Loukanka as a wider sausage family is not a geographical indication.
Serving and cultural significance
Remove the casing and cut the flattened sausage into thin oval slices. Serve with bread, white cheese, pickled vegetables and Bulgarian wine or rakia. Its cumin and pepper suit a simple cold plate better than heavy cooking.

Traditional or protected production
Generic Loukanka covers Bulgarian pressed dry sausages with regional variation. Lukanka Panagyurska TSG has a defined 60% beef or buffalo, 20% lean pork and 20% pork belly composition, with pepper, cumin, sugar, salt and permitted curing agents. The TSG is dried at no more than 17°C, pressed two or three times and processed for at least 20 days.

Notes
- The official protected specification controls the named product. Any Curesmith EQ, starter-culture, curing-salt or home-scale adaptation is a separate method and must not be presented as designation-compliant.
- Nitrite at 156 ppm ingoing.
- Target roughly pH 4.9 through a prompt, clean ferment.
- Convert any volume spice measures to weight as a percentage of the meat.
