Mojama de Isla Cristina is the PGI salt-cured and dried tuna loin associated with Isla Cristina and the Huelva coast.
Where it's from
Climate. The wind-dried coast of the Gulf of Cadiz, in the path of the almadraba tuna.

How to recognise it
It is a compact dark loin with a smooth dense slice and clean cured-tuna aroma. The surface and centre must be dry and sound, without rancidity, sourness or wet spoilage.
Origins and history
The fishing and salting communities of Isla Cristina developed around Atlantic tuna and long-distance preservation. Mojama became one of the coast's most valued cured-fish products.

Serving and cultural significance
It is eaten in fine slices with olive oil, toasted almonds, tomato and local bread, and remains a signature product of the Huelva coast.
