Overview
Mortadela Bolonia is a Spanish-standard cooked sausage made from a fine pink pork paste with sharply defined cubes of white bacon or fat. The legal identity rests on that contrast between smooth base and visible cubes. Source formulas may add whole peppercorns, pistachios, wine or other spices, but those additions do not turn the product into Italy's protected Mortadella Bologna.

Identity and terminology
Spain's national meat-products standard separately defines Mortadela, Mortadela Bolonia and Mortadela Cordobesa. Mortadela Bolonia is the form with clearly cubed fat; Cordobesa instead uses much smaller fat grains and pitted olives. The word order matters. Mortadela Bolonia is a Spanish product category, while Mortadella Bologna is the exact Italian PGI name controlled by a geographical specification and certification system.
Composition and characteristics
The slice should be evenly pink and fine-textured, interrupted by clean white cubes rather than smeared fat. A broad chub produces large round slices. Peppercorns and pistachios may create dark and green inclusions in a source-specific branch. The paste should be elastic and moist, without water pockets, grey raw areas, crumbling around the fat or a greasy broken surface.
Production and process
Chilled lean pork and a binding fat fraction are ground and fine-cut with salt, nitrite cure, ice and seasonings. Separately diced hard fat is folded in only after the base has developed a stable bind. The chub is stuffed without air, cured under refrigeration, poached gently until the cold point reaches 71°C and cooled rapidly. Temperature control during fine-cutting prevents the emulsion from breaking.
History and regional forms
The name shows how Bologna's mortadella idea travelled and was translated into other national sausage systems. Spanish regulation does not merely use mortadela as a loose comparison; it records Bolonia as a defined cut-face style. That legal recognition supports an encyclopaedic entry, but it does not establish a protected Spanish geography or permit the Italian PGI logo. Modern commercial compositions can vary within applicable ingredient and additive rules.
Use, storage and related products
Slice cold for sandwiches, tapas and mixed cold plates, or cut into cubes for snacks. Because it is a moist cooked sausage, keep it refrigerated and avoid prolonged buffet exposure. Declare soy and pistachio when they are used. Compare it with Mortadela Cordobesa, which is olive-studded, and with Mortadella Bologna PGI, whose Italian raw materials, production area and dry-air cooking specification are separate legal controls.

Method
- Part-freeze the back fat, cut clean 6 mm cubes and return them to refrigeration.
- Grind lean pork and jowl through 6 mm, rechill and grind through 3 mm.
- Fine-cut the ground meat with salt, Cure #1, soy protein, spices, wine and crushed ice.
- Fold in fat cubes, peppercorns and pistachios without crushing them.
- Fill the casing without air and refrigerate 8–12 hours.
- Poach at 78–80°C until the cold point reaches 71°C.
Safety. Maintain emulsion temperature below 10°C, calculate Cure #1 on the animal block, cook to 71°C, chill rapidly and never apply the Italian PGI identity or logo.
