How to recognise it

A firm slab with alternating red lean and white fat, clean rind and a sweet cured aroma. It should not be greasy, sour or rancid. A hard dry rim, wet or grey centre, rancid fat, sourness, insect damage or uncontrolled mould indicates an unsafe or uneven cure.

Origins and history

Panceta curada is the Spanish farmhouse way with the pork belly, salting the fresh slab and then leaving it to dry and mature in cool air over several weeks. It belongs to the old Mediterranean habit of preserving the whole pig, turning a cheaper cut into a keeping meat. Every curing region works to its own taste, some leaving the belly plain while Leon and other northern areas rub it with pimenton and garlic or pass it through cold oak smoke. Unlike the rolled Italian pancetta it is usually kept flat as a slab. Curing belly converted a perishable fatty cut into a slicing meat and a powerful cooking ingredient. Regional versions range from plain salted slabs to paprika, pepper or smoke finishes. The belly's alternating lean and fat made it both a slicing cure and a cooking ingredient, while regional differences in pepper, garlic, wine and smoke produced many local forms.

Serving and cultural significance

Slice thinly only when the raw cure has passed its full release checks. More commonly, cut it into lardons and cook it with eggs, beans, potatoes and greens. Slow rendering keeps the fat sweet and prevents the lean from hardening.
