Pieniška is the feminine Lithuanian adjective formed from pienas, milk, and dešra means sausage. The unaccented source title Pieniska loses both the diacritic and the product noun. Lithuania's technical regulation recognises pieniška in the cooked-sausage group and pieniškos for small cooked sausages, making careful spelling and product form important in a publication record.
Composition and characteristics
Beef supplies dark lean protein and firmness, while pork moderates the colour and bite. Milk powder supports water binding and a rounded dairy note; whole egg adds emulsifying protein and tenderness. Black pepper, allspice and nutmeg are restrained. The combination is not a fresh breakfast sausage and should not be confused with a milk-only marketing claim applied to an unrelated frankfurter.

Both meats are ground finely and converted into a stable cold batter with measured ice. Milk powder and beaten egg enter while the mass remains cold so their proteins disperse evenly. Method
- Chill meat, egg, ice and equipment to 0–2°C.
- Grind beef and pork separately through 3 mm and rechill.
- Fine-cut beef with salt, Cure #1, spices and half the ice, then add pork and remaining ice.
- Blend in milk powder and cold beaten egg until evenly dispersed and cohesive.
- Fill the broad casing without air and refrigerate 8–12 hours.
- Dry the casing and apply light warm smoke for up to two hours.
