Overview

Relleno de Huéscar is a pale cooked sausage from the Huéscar area of northern Granada. Pork, poultry and cured ham are bound with bread and egg, then scented with garlic, parsley, white pepper, nutmeg and saffron. Its colour is cream to yellow rather than cured pink, and its soft, rich slice sits between an embutido, a savoury bread pudding and a festive meat stuffing.

Identity and terminology

Relleno means filling or stuffing, a broad Spanish word that becomes specific when joined to Huéscar. Agricultural inventories published by Spain's ministry record Relleno de Huéscar among Andalusian traditional sausages, while the corresponding tables show no DOP or IGP sign for it. The geographical name therefore deserves historical respect, but a home recipe must not be presented as certified product.

Composition and characteristics

The characteristic architecture balances three meats with a large bread-and-egg fraction. Pork provides richness, poultry lightens the flavour, cured ham contributes salt and mature aroma, and bread absorbs egg and saffron liquid. Parsley and garlic keep the profile savoury, while nutmeg and saffron create the distinctive warm fragrance and yellow cast. The slice should be tender and cohesive, not rubbery or wet.

Production and process

Saffron is infused before mixing. Pork and poultry are ground, ham is diced and dry bread is sliced so it can hydrate inside the matrix. Beaten egg binds the mixture, which is filled into a medium casing without excessive pressure. The sausage is gently poached to a poultry-appropriate cold-point temperature, then chilled quickly. Bread and egg make accurate cooling and allergen declarations essential.

History and regional forms

The product belongs to the inland Granada tradition of substantial winter and festive foods based on locally available meat, bread, eggs, herbs and saffron. Regional heritage recipes allow some variation in the poultry used and in the balance of bread and meat. That flexibility is part of living practice, but it does not justify importing unrelated ingredients or claiming a formal specification that the product does not possess.

Use, storage and related products

Relleno may be served cold in slices, warmed gently or added to celebratory plates with other local meats. Its closest relatives are Spanish white cooked sausages and bread-bound stuffings, yet the saffron, egg and Huéscar association keep it distinct from Morcilla Blanca de Cazorla. Keep it refrigerated, protect the ready-to-eat surface after cooking and declare both wheat and egg.

Method

  1. Infuse saffron in the measured water, then chill the infusion.
  2. Grind pork and chicken through 6 mm, dice ham to 6 mm, slice bread and beat the eggs.
  3. Combine meats, bread, egg, saffron water, citrus, garlic, parsley and spices to a soft cohesive mass.
  4. Fill 36–40 mm hog casings without overpacking and tie securely.
  5. Poach gently until the cold point reaches 74°C.
  6. Shower briefly, then complete controlled chilling.
