Szegedi Salami is a broad salami with a dense white-grey bloom, brown-red pork and fine white fat. the aroma combines mature pork, paprika and restrained smoke without aggressive acidity.

Climate. The humid microclimate of the river Tisza fosters the house mould flora that defines the salami.

Origins and history
Márk Pick founded his business in Szeged in 1869, and large-scale salami production expanded during the 1880s with specialist knowledge brought by Italian workers. Szeged offered pork from the Hungarian plain, access to trade along the Tisza and a cold-season climate suited to smoke and slow cellar maturation. The firm refined a dense pork-and-hard-fat sausage with restrained spice and a naturally developed white-grey coating. By the early twentieth century salami had become the company's principal product and a recognised Hungarian export. The protected name received European PDO registration in 2007. Both Szegedi szalámi and Szegedi téliszalámi refer to the same protected product, which remains legally distinct from Budapest winter salami and from the generic winter-salami family.
Serving and cultural significance
Remove the casing and slice thinly with bread, peppers, cheese and Hungarian wine. The clean pork, hard fat and cellar mould should remain central. Avoid strong sauces and keep the cut face covered between servings.

Szegedi szalámi PDO is a pork-and-hard-fat winter salami seasoned with white pepper, paprika, allspice and permitted spice, cold smoked and matured beneath the characteristic naturally developing mould. The protected identity depends on the Szeged production environment and its prescribed maturation system.

Notes
- The official protected specification controls the named product. Any Curesmith EQ, starter-culture, curing-salt or home-scale adaptation is a separate method and must not be presented as designation-compliant.
- Nitrite at 156 ppm ingoing.
- Not an acid ferment: it ripens at a high pH (Szegedi sits above pH 5.6), relying on salt, a noble mould cover and slow drying.
- Beech cold-smoke at about 12 C for 12 to 14 days, then long cool drying.
- Convert any volume spice measures to weight as a percentage of the meat.
- House mould flora (over ten Penicillium-dominated species) rather than an added starter, a defining trait of the Szeged origin.
Safety. A mould-ripened, slowly dried salami rather than a tangy ferment; safety rests on salt, the noble mould cover and thorough drying. The high pH means drying must be slow and even.
