Origins and history

Teewurst developed in the nineteenth-century meat industry of Rügenwalde in Pomerania, now Darłowo in Poland. Fine grinding, a high proportion of fat and gentle smoke created a smooth raw sausage that spread easily on bread. The name was associated with refined afternoon tea service, whether because it was actually eaten at tea or because the word suggested fashionable English habits. Rügenwalde became famous for the product, and its producers protected the regional commercial identity before the Second World War. After 1945 displaced firms re-established production in West Germany and maintained Rügenwalder Teewurst as a trademark tradition. Generic Teewurst, however, remains a broader sausage style.

Serving and cultural significance

Spread a thin layer on rye or wheat bread, traditionally at breakfast or tea, with pickles or sliced onion. Serve cool but not icy so the fat softens. Keep the sausage refrigerated throughout its short opened life.

Traditional or protected production

Generic Teewurst is a finely comminuted, high-fat, spreadable raw sausage. Pork, beef and soft fat are cured and seasoned, fermented and gently cold smoked in a casing that supports a smooth spreadable paste. The product is not dried to the water activity of a hard salami and remains refrigerated. Rügenwalder commercial history and trademarks do not create a generic geographical indication.

Notes

  • Nitrite at 156 ppm ingoing.
  • Target roughly pH 4.9 through a prompt, clean ferment.
  • Convert any volume spice measures to weight as a percentage of the meat.
  • High fat (roughly a third), very finely minced, ripened only briefly to stay soft and spreadable.

Safety. A fermented sausage: the acid drop and drying carry the safety. Ferment promptly to close the early Staphylococcus aureus window.
