Chilled turkey and fat are ground twice, worked with ice and salt until the mass binds, then stuffed into a cook-safe fibrous casing. The broad cold point must reach the official ground-poultry safety endpoint. A short shower is followed by rapid complete chilling. The uncured branch receives no room-temperature colour-development rest, and any pink colour after cooking is not used as a safety test.
