Weiße Zungenwurst is a German cooked press sausage whose visual identity comes from red cured tongue cubes set in a pale veal, pork, fat and milk matrix. The casing is broad and waterproof because the product is poached rather than smoked. White pepper, nutmeg, cardamom and a strained vegetable-milk extract give delicate seasoning. The finished slice should show clean, well-distributed tongue pieces against a light background, with a firm but tender press-sausage texture and no blood-darkened base.

Identity and terminology

Weiße means white, Zunge means tongue and Wurst means sausage. Current German meat guidelines place White Tongue Sausage among Presswürste. The colour word distinguishes it from red or blood-containing Zungenwurst forms, not from the cured tongue itself. The tongue is deliberately pink-red while the surrounding base remains uncured and pale. The Atlas therefore treats Weiße Zungenwurst as its own identity and does not merge it into generic tongue sausage, blood sausage or mortadella with tongue inclusions.

Composition and characteristics

Half of the animal block is pork tongue, cooked tender and diced into large show pieces. Lean veal and pork form a mild protein base, while back fat softens the texture. Milk and ice support a pale, fine matrix. Nutmeg and cardamom are subtle, and the strained root-vegetable, leek and parsley extract contributes savour without leaving visible vegetable pieces. Milk and celery must be declared. The cut face should be moist and cohesive, never greasy, grey around the tongue or riddled with jelly pockets.

Production and process

Only the tongue fraction is cured. A measured equilibrium dose replaces the source's concentrated injection-and-immersion brine, preventing uncontrolled nitrite pickup. After curing, the tongue is simmered until tender, peeled, chilled and diced. The uncured veal-pork-fat base is fine-cut cold with milk, ice, salt and spices, then the tongue is folded through. The broad casing is poached to a measured centre and rapidly chilled. Both the preliminary tongue cook and final baton cook require temperature control.

History and regional forms

Tongue sausages belong to the Central European tradition of using cooked edible offal as a prized visible inclusion rather than hiding it in a paste. German food-book classification preserves White Tongue Sausage among the press-sausage names consumers may encounter. The reviewed evidence supports that technical identity but not a protected geographical origin or one town of invention. The milk-white matrix and cured-tongue contrast reflect specialised butcher technique, careful colour control and the high value historically attached to tongue.

Use, storage and related products

Serve Weiße Zungenwurst cold in thin slices with bread, mild mustard, pickles or salad so the red-and-white mosaic remains visible. Do not confuse it with Blut-Zungenwurst, which uses blood and has a dark base, or with Mortadella with Tongue, whose fine cooked-sausage identity and seasoning are different. Because the product is broad, moist and handled after the tongue's first cook, post-cook hygiene matters. Refrigerate continuously and freeze portions not required within the short holding period.
