How to recognise it

The sausage has a reddish-brown exterior and a dense red slice with visible fat. Garlic and warm spices should be prominent without sour spoilage, rancidity or a wet centre.

Origins and history

Afyonkarahisar developed as a livestock and food-processing centre on Anatolian trade routes. Local butchers refined a firm, intensely spiced sausage suited to drying and storage, and the name gained Turkish protection before EU PGI registration in 2025.

Serving and cultural significance

Afyon Sucuğu is commonly sliced and cooked with eggs, bread or hot dishes. Heating releases its garlic, spice and rendered fat.
