Air Removal and Void Prevention
Air can be incorporated during grinding, mixing, transfer and loading of the stuffer. It can also remain when the casing is filled unevenly or the horn is not kept continuously charged.
Voids interrupt slice structure, create pale or dark pockets, encourage oxidation and collect liquid or fat. In dried products, they can produce irregular internal moisture and mould growth.
Entrapped air changes heat and mass transfer and can make measurement less representative. A visually acceptable surface does not prove that the interior is compact.
Gentle transfer, proper stuffer loading, appropriate pressure and continuous filling reduce air. Vacuum mixing or vacuum filling can help, but equipment settings and product rheology still matter.
A sterile casing needle may release isolated air pockets where the product and specification allow it. Excessive puncturing can damage casing integrity or create contamination routes.
Inspect cut surfaces, weight consistency and filling behaviour, and investigate recurring internal voids. Correct the source rather than treating every bubble after stuffing.
