Antioxidants and Preservatives in Formulation

Antioxidants limit oxidative change, while antimicrobial preservatives inhibit selected organisms. Some ingredients have multiple effects, but their functions should not be collapsed into one general claim.

Permitted substances, maximum levels, product categories and labelling differ by jurisdiction. A safe-and-suitable listing or GRAS status applies only within the stated conditions of use.

Tocopherols, approved plant extracts, ascorbate systems and other antioxidants can slow lipid or pigment oxidation. Their performance depends on dose, fat composition, oxygen, metals, light and packaging.

Sorbates, natamycin and other preservatives act against defined organisms and may be restricted to surfaces or specific products. They are not broad-spectrum substitutes for lethality, refrigeration or drying.

Natural origin does not automatically make an ingredient safer, stronger or legally unrestricted. Standardisation, active concentration, impurities and sensory effects must be controlled.

Record ingredient identity, supplier, lot, concentration, addition rate and legal basis. Protected formulas and clean-label choices should be described separately from safety requirements.
