A single-strain surface culture of Penicillium nalgiovense that gives cured sausage its even white noble-mould coat.
Bactoferm Mould-600, once sold as M-EK-4, is a single-strain culture of Penicillium nalgiovense, the classic white noble mould of dried sausage. Applied by dipping or spraying after stuffing, it grows into a dense, short, even white coat with a pronounced mushroom aroma.
Its value is competitive. By colonising the surface quickly it suppresses wild moulds and yeasts, including toxigenic species such as Penicillium nordicum that would otherwise settle on cured meat. It also moderates the surface, easing drying and lifting the pH slightly for a less acidic finish. The spores are soaked in cool, non-chlorinated water before use.
