Black Pepper
Also known as peppercorns, Piper nigrum
The most widely used spice in charcuterie, from a light dusting in the mix to a whole-peppercorn coating. Valued for its warm bite and, secondarily, for mild antioxidant and antimicrobial activity.
Black pepper is the near-universal seasoning of cured meats, used in almost every tradition, whether ground finely through a salami mix or pressed as cracked or whole peppercorns onto the surface of a coppa or a pepper-crusted bresaola. It gives warmth and a clean bite that suits fat and salt.
It is added at modest levels, a fraction of a per cent through the meat, and like many spices it brings a small antioxidant and mildly antimicrobial bonus alongside its flavour. It is the default against which more regional spices are chosen.
