Overview

Boquerones en Vinagre are fresh anchovy fillets whitened in vinegar, then dressed with garlic, parsley and olive oil. They are not cooked by the acid. Parasite control must be completed by freezing, and the finished dish remains refrigerated.

How to recognise it

The fillets are pearly white, soft but intact, with a bright vinegar aroma and fresh garlic, parsley and olive oil. They should not smell fishy or ammoniacal, and the flesh should not be mushy. Acid whiteness is not proof that parasites have been destroyed.

Origins and history

Boquerón is the Spanish name for the fresh anchovy, and the vinegar preparation belongs to the taverns and fishing towns of the south. Unlike Cantabrian anchoas, which mature for months under salt, boquerones are made young and eaten for their delicate fresh-fish character. Vinegar was valued because it brightened flavour and slowed spoilage for a short time in a warm coastal climate. Modern parasite knowledge adds a control that the traditional recipe could not supply.

Serving and cultural significance

Serve as a tapa with bread, olives, potato crisps and cold beer or wine. Let excess marinade drain, but keep enough olive oil to prevent the fillets from drying. Their brightness makes them a useful contrast to fried seafood, cured ham and richer tapas, although they must remain chilled until shortly before service.
