Brine Density, Salinity and Concentration Instruments
Brine instruments infer concentration from a physical property such as density, refractive index or electrical conductivity. The displayed value is therefore a model of the solution rather than a direct count of sodium-chloride molecules.
A hydrometer floats according to liquid density, while a salometer is commonly scaled for salt solutions. Meniscus reading, temperature, trapped bubbles, vessel depth and dissolved ingredients can all shift the result.
Refractometers respond to the total dissolved material that changes refractive index, and conductivity meters respond to mobile ions. Neither automatically distinguishes salt from sugar, cure, phosphate or dissolved meat components.
Density, refractive index and conductivity change with temperature. Compensation functions have limits, and a scale designed for clean sodium-chloride solution may be misleading in a formulated curing brine.
Agitate the brine sufficiently, take a representative sample and avoid foam, fat, sediment or undissolved crystals. Instruments and sample vessels should be clean and allowed to reach the intended measurement condition.
Check the instrument with suitable standards or independently prepared reference solutions over the working range. Record the device, sample, temperature, result, correction and any formula used to interpret the reading.
