Burning

Scorching from heat applied too high or too close, usually during hot smoking or cooking. It hardens and blackens the surface, taints the flavour, and favours harmful compound formation.
Burning is heat damage rather than a smoke fault: the surface is scorched by heat that is too high or too close to the source, whether in hot smoking or in cooking. It presents as a charred, blackened or blistered surface, a hard scorched crust, and an acrid, bitter, burnt flavour that overrides the meat and any clean smoke. It is distinct from over-smoking and poor-smoke, which are about the smoke itself; here the smoke may be fine and the heat is the problem.
The mechanism is direct thermal damage. Too much radiant or convective heat, or too little distance from the fire, pyrolyses and chars the surface faster than the interior can equalise, hardening and blackening it. Beyond the ruined flavour and texture, high-heat charring of cured meat matters for safety, because it is exactly the condition that favours the formation of harmful compounds. The high temperatures of charring drive the chemistry that forms nitrosamines from nitrite and amines in cured meat, and severe charring and flare-ups also raise the load of the carcinogenic polycyclic aromatic hydrocarbons that heavy smoke and burnt fat can carry. So burning is not only a quality fault; it tips the product toward the very compounds curing tries to keep low.
The usual causes are a fire run too hot for the product, the meat set too close to the heat source, fat flaring as it drips onto the fire, or hot-smoking at temperatures that stray into scorching. It is a particular risk where hot smoking and cooking overlap and the heat is not carefully separated from the smoke.
**How to avoid it.** Prevention is gentle, controlled heat at a safe distance. Keep the heat source far enough from the product, hold hot-smoking and cooking temperatures in their intended range rather than letting them spike, manage dripping fat so it does not flare, and use indirect heat where scorching is a risk. For a product that only needs smoke and not cooking, keeping the process cool avoids the problem entirely.
**How to fix it.** Remedy is limited. A lightly scorched surface can sometimes be trimmed away, sacrificing the charred layer to save the rest, but a badly burnt product is spoiled in flavour and, given the compound-formation concern, is not worth trying to rescue. Prevention through heat control is the only real answer.
