Overview

Cachuela is an Extremaduran spread of pork liver cooked in lard with pimentón, garlic and spice. It is darker and more liver-forward than Manteca Colorá, and is usually eaten warm or soft on toast.

How to recognise it

The spread is deep rust-brown, smooth to slightly coarse, with a clear cooked-liver aroma and red paprika fat. The lard should melt cleanly on warm bread. Bitterness, grainy overcooked liver, sourness or rancidity are faults.

Origins and history

Cachuela belongs to the winter matanza, when the liver had to be cooked quickly and rendered lard was abundant. Combining the two produced an economical, energy-dense breakfast for agricultural work. Pimentón de la Vera, garlic and cumin or other household spices gave each town and family a recognisable version. Its humble ingredients did not prevent it from becoming one of Extremadura's most characteristic morning foods. It remains closely associated with village cafés, toasted bread and the cold-season rhythm of slaughter, rendering and shared family meals.

Serving and cultural significance

Spread Cachuela on thick toasted bread, most often at breakfast or as a mid-morning meal. Warmth releases the pimentón and softens the lard, so it is best served slightly warm rather than hard from the refrigerator. A bitter coffee, local wine or simple fruit provides welcome contrast to its liver richness.
