Caillette ardéchoise is a baked pork-and-greens faggot wrapped in caul, eaten hot or cold. A small browned parcel in caul fat, green-flecked inside with a coarse pork-and-liver texture and strong herb and garlic aroma. The Codex treats the product as a complete curing or cooking system, not simply a famous name. Raw material, cut or particle size, casing, smoke, fermentation, heat treatment and maturation all contribute to the result. How to recognise it

A small browned parcel in caul fat, green-flecked inside with a coarse pork-and-liver texture and strong herb and garlic aroma. A raw or grey centre, split filling, sourness, greasy purge or broken refrigeration is unacceptable.

Origins and history

A baked pork faggot of the Ardeche, mixing pork and pork liver with chard or spinach and herbs, formed into a ball, wrapped in caul fat and baked. The greens lighten the rich meat, and it is eaten hot or cold. It is a frugal, whole-animal country dish of the southern Massif Central. Caillettes were made on slaughter day to use liver, throat meat, greens and caul fat quickly. Ardèche versions are often greener than neighbouring Drôme versions, with chard, spinach or cabbage balancing the rich pork. Legends and commercial origin stories are identified as such rather than used as proof of the current specification.

Method

  1. Mix pork and liver with cooked greens and herbs.
  2. Form into balls and wrap each in caul fat.
  3. Bake until cooked through.
