Casing Preparation, Storage and Handling
Receive casings with supplier, species, type, calibre, lot and storage instructions intact. Check odour, colour, package integrity and any declaration of edibility or required removal before accepting them for production.
Salted natural casings are normally stored under strong salt and prepared by shaking off salt, rinsing and soaking according to supplier guidance. Soaking restores flexibility, but excessive time or heat can weaken the wall and encourage microbial growth.
Collagen, cellulose, fibrous and plastic casings have different preparation rules. Some are used dry, some require controlled soaking, and some lose strength or barrier performance if handled as though they were natural gut.
Use clean potable water, sanitised containers and dedicated tools. Do not return prepared casings to the original stock, mix unused casing with product-contaminated pieces or allow soak water to become a general holding bath.
Inspect for holes, weak spots, tangles, dryness and uneven hydration. Load the horn without twisting or damaging the casing and keep the prepared quantity matched to the immediate stuffing run.
Return only clean, unused casing to an appropriate salt or supplier-approved storage condition. Label the lot and preparation date, keep it cold where required and discard material showing putrid, rancid or otherwise abnormal condition.
