Chilling and Refrigeration

Chilling removes heat from meat, while refrigeration keeps the product cold after that heat has been removed. Both belong under storage, but neither destroys all microorganisms or repairs contamination introduced earlier.

Cold control begins with raw materials and continues through curing, cooking, cooling, packaging, transport and service. A break anywhere in that chain can consume part of the product’s safety and quality margin.

Room air may be cold while the centre of a large ham, packed tray or tightly loaded rack remains warm. Geometry, load density, airflow, packaging and contact between products determine how quickly heat leaves the food.

Refrigeration slows microbial growth and chemical change rather than stopping them. Psychrotrophic organisms, oxidation, purge, colour change and surface drying can still progress during a long refrigerated life.

Warm loading, frequent door opening and poorly balanced humidity create condensation. Moist surfaces and repeated warming also increase spoilage risk, so cold rooms should not be treated as passive cupboards.

Monitor representative product temperatures, not only the display on the refrigerator. Records, stock rotation, shelf-life controls and a defined response to temperature excursions turn cold storage into a controlled process.
