Overview

Chistorra de Navarra is the protected Navarrese form of the thin, paprika-red fresh sausage known in Spanish as chistorra and in Basque as txistorra. It is sold raw, kept refrigerated and cooked before eating.

How to recognise it

It is long, narrow and flexible, with a bright red-orange filling and a clear aroma of pork, garlic and paprika. The casing should be intact and the filling evenly mixed, without sour purge, greying or broken fat.

Origins and history

The sausage belongs to the household and butcher traditions of Navarra, where narrow casings allowed seasoned pork to be prepared quickly for frying or grilling. The multilingual protected name reflects the Spanish, Basque and regional forms used for the same product.

Serving and cultural significance
