Collagen Casing

A manufactured casing made from processed collagen, used as a uniform, convenient alternative to natural gut casings. Consistent in size and strength, edible in its thin forms, and widely used in commercial production.

Collagen casings are made from processed collagen, usually from cattle hides, extruded into tubes of exact and consistent size. They are the main manufactured alternative to natural gut casings, and their appeal is uniformity: every casing is the same calibre and strength, which suits mechanised stuffing and gives a predictable finished shape.

The thin kinds are edible and behave much like natural casing on the plate; thicker ones are peeled off. They are permeable enough to allow smoking and drying, though many traditional makers still prefer natural casings for their irregular character and the way they breathe. Collagen is the practical, repeatable choice; natural is the traditional one.
