Comminution Temperature and Smearing Control
Control of product and equipment temperature during grinding, mincing and chopping to preserve clean particle definition and prevent fat and connective tissue from smearing.
Cutting and deformation convert mechanical energy into heat. Repeated passes, blunt components, restricted plates and long residence times can warm meat even when the room itself is cold.
Fat should remain firm enough to cut cleanly for the intended particle size. Soft fat coats lean surfaces and equipment, producing smear instead of discrete particles.
Sharp knives, correctly fitted plates, suitable feed rates and pre-chilled product reduce friction and compression. Equipment condition is therefore part of temperature control rather than a separate maintenance issue.
Measure where the process can change temperature: before comminution, between stages and at discharge. A single final reading may miss local warming or a short excursion in a high-energy step.
Smearing can reduce visual definition, weaken drying pathways, interfere with protein distribution and contribute to greasy texture or fat separation. The acceptable endpoint differs between coarse and fine systems.
Use cold raw material, appropriate particle size, staged processing, short exposure and defined stop points. Rechilling should be a planned control, not a routine repair for uncontrolled processing.
