Cooked-Meat Colour

The appearance produced when heat changes meat pigments and structure, influenced by myoglobin chemistry, pH, oxygen exposure, cure, endpoint temperature and optical properties.

Cooking denatures myoglobin and other proteins, changing how meat absorbs and reflects light. The final colour depends on pigment state before heating as well as the temperature-time history, so cooked appearance cannot be predicted from temperature alone.

Some meat can appear brown before a validated lethality is reached, while other meat can remain pink after adequate heating. pH, oxygen, reducing capacity, packaging atmosphere, species and ingredients can all shift these responses.

Nitrite-cured meat follows a different pigment pathway and can retain a stable pink colour after cooking. The expected colour of a cured ham or cooked sausage should not be judged by the visual rules used for uncured fresh meat.

Oxygen exposure, smoke, drying, casing, fat, light and heating rate can create gradients between the surface and centre. Iridescence or unusual sheen can arise from structure and viewing angle and is not automatically spoilage.

Instrumental colour coordinates and controlled visual assessment provide more repeatable information than casual observation. Instrument geometry, illuminant, sample temperature, bloom time and surface preparation should be documented when results are compared.

Colour is a quality and diagnostic observation, not a stand-alone lethality measure. Safe cooking decisions should use a validated process and calibrated temperature measurement rather than waiting for a preferred visual colour.
