Cooking of Cured Meat
Applying a controlled time–temperature process to cured meat to obtain the required lethality and product quality before cooling and post-process handling.
Cooking can provide the principal lethality step in hams, sausages, pâtés and smoked meats. Cure colour or smoke exposure does not demonstrate that the required internal process occurred.
Lethality depends on organism, product composition, internal temperature and time held. A lower temperature may be effective with a validated hold, while touching a target momentarily may not be enough.
The relevant point is the coldest part of the product or load. Probe placement, instrument accuracy, product diameter, casing, fat and smokehouse uniformity affect the observed endpoint.
Heating sets proteins, melts fat and develops cured colour and flavour. Excess heat can reduce yield, separate fat or create rubbery texture, so quality optimisation occurs inside the validated safety envelope.
After lethality, cooling must limit spore-former growth and handling must protect the ready-to-eat product from recontamination. A successful cook can be undone by slow cooling or dirty slicing.
The record should identify product, load, schedule, cold-spot result, hold time, deviations and corrective action. Generic household timing is not a substitute for the supported process.
