Cooking Vats, Ovens and Immersion Systems

Thermal systems include hot-water vats, steam cabinets, combination ovens, dry ovens, smokehouses and controlled immersion equipment. Each transfers heat differently and creates different surface and product conditions.

Water and condensing steam generally transfer heat efficiently, while dry air can heat more slowly and increase surface evaporation. Circulation, humidity and product contact determine whether the medium remains uniform.

Diameter, mass, casing, mould, rack spacing and starting temperature control the slowest-heating point. A schedule for one load or geometry cannot automatically be moved to another.

The equipment controller regulates the medium, while a calibrated product probe measures the relevant product location. Probe placement, data interval and cold-point selection must match the supported process.

Vats, racks, baskets, doors, seals and drains require safe loading and cleanability. Water systems must avoid contamination, uncontrolled dilution or ingress into products not designed for immersion.

Map equipment performance, confirm the operating load and define corrective action for short cooking, probe failure or interrupted heating. Appearance and eventual refrigeration cannot demonstrate that missed lethality was recovered.
