Cooling of Cooked Meat

Cooling of cooked meat begins when the validated heat process ends. Its purpose is to move the product through growth-supporting temperatures while preserving the result of the lethality step.

After cooking, ready-to-eat surfaces must be protected from raw materials, dirty equipment, hands, aerosols and condensate. Cooling equipment and handling therefore belong to the hygienic zone.

The required cooling rate is governed by cooling rates and spore control, not by convenience. Large muscles, emulsified sausages, pâtés and moulded products may have very different cooling behaviour.

Spacing, smaller units, shallow containers, cold-water showers, ice, blast chilling or controlled air cooling may be used where appropriate. The chosen method must fit the product and avoid contamination or water ingress.

A refrigerator designed to hold cold product may cool a hot, densely loaded batch too slowly. Loading pattern, airflow and heat-removal capacity must be matched to the actual production volume.

Confirm the product endpoint and the complete time-temperature history before routine refrigerated storage or final packaging. A process record should identify the monitored unit and any corrective action.
