Core-Temperature Measurement and Validation

The placement, calibration and interpretation of product probes used to establish the slowest-heating or slowest-cooling location and confirm a supported thermal process.

Core measurement asks whether the relevant product location followed the supported heating or cooling schedule. The cold or hot spot can depend on geometry, fill and equipment.

Sensor range, response time, shaft diameter and accuracy should suit the process. Thick probes or conductive stems can alter or misread small products.

Place the sensing region at the validated slowest point and prevent movement during processing. A visually central placement may not be the established cold spot.

Verify instruments over the working range using appropriate references and record identity and correction. Ice-point checks alone may not demonstrate hot-range performance.

Validation establishes where and how to measure and what schedule controls the hazard. Routine monitoring then confirms each process stays within that supported design.

Treat probe failure, movement or missing data as a process deviation. Appearance or eventual cooling cannot reconstruct an unmeasured lethality history.
