Cured Bellies, Jowls and Fatty Cuts

The whole-cut family based on belly, jowl, back fat and other fat-rich anatomical materials preserved by curing, drying, smoking, cooking or combinations.

Bellies, jowls and fat-rich cuts retain anatomical identity but contain different proportions of lean, connective tissue and fat.

Products may be dry-cured, brined, smoked, cooked, air-dried or sold for later cooking. Pancetta, bacon, guanciale and lardo illustrate different routes rather than one formula.

Fat slows water movement differently from lean and is vulnerable to oxidation, while lean seams may control salt and safety endpoints.

Rolling, pressing, skin retention, casing and wrapping change geometry, surface exposure and drying behaviour.
