Cured-Colour Failure and Instability

Weak formation, incomplete development or later fading of the characteristic cured-meat pigment system.

Cured colour develops when nitric oxide interacts with meat pigment and is stabilised by the product process. Cure, reducing conditions, pH, heat and oxygen all influence the pathway.

Low or uneven cure, insufficient time, poor distribution, unsuitable pH or missing reductant support can leave weak colour. Raw and cooked products require different interpretation.

Light, oxygen, residual oxidants, packaging failure and storage temperature can fade or brown an initially normal colour.

Grey centres, pale streaks and surface fading point to different exposure histories. Slice thickness and package opening can rapidly change appearance.

Check formula, cure source, reductants, pH, heat, oxygen barrier and time. Analytical confirmation is stronger than colour photography alone.

Correct the specific formulation, distribution, heating or packaging mechanism. Increasing nitrite without legal and technical justification is not a colour-control strategy.
